1 lb ground turkey
1 large parsnip
4-5 purple top turnips
Salt & pepper
Extra Virgin Olive oil
Brown turkey in a pan with Worcestershire sauce. (About 1/4 cup)
Peel & cut turnips & boil until soft, mash until smooth (like mashed potatoes) add 2 tbsp olive oil, 1 tsp salt, mix & set aside
Peel & cut carrots & parsnips steam until soft
Place ground turkey into casserole dish, layer carrots & parsnips on top of turkey.
Then layer mashed turnips on top of carrots then smooth over top. Add pepper (if desired)
Place into preheated oven at 350 for 20 mins.
