This past weekend we threw a birthday party for the Tiny One after we moved to our new home on Wednesday. Yes, we moved and turned the house over, unpacked and threw a party in the span of 3 days, we are really that insane! Because we had so little time we kept the theme simple with a harvest/fall/Halloween theme. Got to love those October babies, they keep it simple for us! We needed a good simple idea for food and we came up with a variety of our version of gourmet pizzas. This Fall Harvest Pizza was definitely one of the favorites and it was scarfed down pretty quickly forcing me to have to make another for the party and forcing me after many demands of the family to make it again this week. I won't complain though because it really is that good!
Pizza dough (I used store bought pre made Boboli crust to make my life easier)
2 cups grated mozzarella cheese
Fresh vegetables-we used sweet potato, squash, red onion, whole garlic cloves
1-1 ½ cups of ricotta cheese
1-2 Rosemary (if fresh better if not sprinkle the spice like we did)
1.) Preheat the oven to 450 degrees
2.) In a saute pan on the stove use some olive oil and then cook up your vegetables sprinkling with rosemary. We use enough vegetables to cover the medium to large saute pan.
3.) Lightly spread olive oil over the crust and then spread the ricotta over the pizza. Spread half the mozzarella on top.
4.) Top the pizza with your roasted vegetables.
5.) Top with the remaining mozzarella and sprinkly again with some rosemary.
6.) Cook for about 12 mins (for Boboli or premade crusts only. For fresh dough approx. 20-25 mins)
