Today our amazing friend Melissa from Bzzyfingers is sharing her Turkey Tacos recipe with us! When we saw she made these for dinner recently, we begged her for the recipe and to share with all you Cape Cod Moms!
Delicious, fun to eat and good for you..... what more could we want in a meal! Plus it is Kid Approved by her children!

You Will Need:
Sauté 1/2 diced onion and 1/2 med diced green pepper in olive oil for a few minutes.
Add black beans (rinsed and drained) and diced tomatoes (fresh are best, but I've used canned before).
Add salt and pepper and cook for 15/20 min.
We also wound up adding some left over corn I cut off the cob from a few days ago. You can season them with cumin and sometimes I add a splash of apple cider vinegar when the beans hit the pan. If you're using fresh tomato, I'll add a tiny bit of sugar to cut the acidity if they won't be cooking for long.
The rest is easy, ground turkey seasoned with taco mix, brown rice, large lettuce leaves as wraps and a little cheese.
