![]() Peanut Butter Eggs By Molly It is spring time now and Easter just passed which means Reese’s Easter Peanut Butter Eggs are on sale. I love peanut butter and chocolate and I use to love Reese’s Easter Peanut Butter Eggs but now can’t bring myself to buy them. But I came across a recipe from Minimalist Baker that I thought I would try with a few modifications. I think they came out really well next time I might use Green and Black’s 70% dark chocolate instead. Peanut Butter Eggs Modified from the Minimalist Baker Ingredients:
Directions: 1. Add dates to a food processor and process until only small bits remain. Next add almonds and peanuts to the food processor and mix until they turn to meal – a few small chunks are OK. 2. Next add peanut butter in 1 Tbsp at a time (8 Tbsp) until the mixture forms a loose dough. If it seems too wet to handle, add almond pulp or more peanuts. If it seems too dry, add more peanut butter. Refrigerate for 5 minutes so it's easier to shape. 3. Scoop out large rounds of dough - heaping 1 Tbsp - and form into an "egg" shape. Place on a parchment lined cookie sheet and pop in the freezer to harden for about 20 minutes. 4. In the meantime, melt your dark chocolate over a double boiler or in the microwave in 30 second increments. Then work in small batches to coat the "eggs." Take just 1 egg out of the freezer at a time for dipping - otherwise they'll get too soft to dip well. 5. To dip, drop eggs one at a time into the chocolate, flip once, pick up with a fork and gently tap on the rim of the bowl to remove excess chocolate. A little excess is OK. Place back on the parchment-lined baking sheet and pop back in the freezer to set. 6. Repeat until all eggs are dipped, re-warming chocolate as needed. 7. For optimum freshness, store eggs in an air-tight container in the freezer or fridge until serving. What are your favorite Spring recipes? Book your tickets now and Use this code: CapecodmomSblog17 ![]() Baby Jogger City Tour Stroller Review By Molly My family and I will be travelling to Miami at the end of this month to visit family and although my kids are older now I will do way too much fast walking to expect them to keep up all the time so we need to bring a stroller(s). At first I was going to bring my old double BOB (which I still can’t life without) and check it. Well when I began reading about travelling with bigger strollers and not being able to gate check them plus the amount of strollers that get damaged or destroyed I was shocked. So I decided to look into small lightweight stroller for travel and I came across the Baby Jogger City Tour stroller which is small enough you can carry it on! This got me very excited so I began to research the Baby Jogger City Tour stroller and if the kids would fit in them but I couldn't really find much on using the stroller with bigger kids. In the meantime I add one to my Amazon cart to watch the price. Brand new Baby Jogger City Tour stroller are $199 and on Amazon they are $159. Let's start with the basic stats of the Baby Jogger City Tour stroller it weighs 14lbs and the child weight limit is 45lbs. The seat is about 8” deep, 12” across and 17” high with an additional 7” between seat back and canopy (24” in total height). The canopy has a large peekaboo window and 50 SPF of protection. The seat back can recline almost flat making suitable starting at three or four months (depending of head control). Since this is a compact stroller the underseat basket is small but can fit a small diaper bag there is also a zip compartment to store the travel bag (included with stroller with a handle and backpack straps making for easy transportation of the stroller). ![]() At 6.5y my daughter is almost 43’ and about 43 lbs and my son 4.5y is about 41” and about 40 lbs. So on the larger side for stroller use but they both fit in the stroller (see pictures) and seem excited to take it on our trip. I did try attaching my Lascal BuggyBoard Maxi Ride-On Stroller Board which worked as long as the attachment pieces could still be pushed to the side when folding the stroller. That being said I could not really push the combined over 80lbs of kids easily using the ride on board and will not be taking it travelling with us. I am not sure how solid this installation would work over time (the Lascal site doesn’t have info for the City Tour whether compatible or not). I discovered the location in Newport Beach, CA on a recent and very relax 4 day kid free get away. As many of your know my husband and I eat a mainly Whole Foods Plant Based diet; this diet can making being away from home some what difficult and stressful. So travelling to California I was hopeful but a little apprehensive about dining out. Our first night in Newport Beach I asked at the hotel if there were any good vegan restaurants around and they recommended Cafe Gratitude. We look at the menu and decided to try it out in the morning. We arrived at Cafe Gratitude at 10 expecting it to be open and serving their lunch menu but it turned out they didn’t open until 11am so we went around to Gratitude To Go and decide to come back to the cafe for an early dinner later. On the To Go side of the building is a small store front and about four tables outside (which when the wind blows the wrong way smells of garbage). We ordered Content which is a Cast-iron quiche. Garbanzo flour frittata, Kalamata olives, tomato, red onion, cashew Feta, toasted almond romesco, gluten-free crostini for $12 and Bonita a Breakfast taco plate. Sprouted probiotic brown rice or quinoa, black beans, pico de gallo, avocado, cashew nacho cheese, spicy pepitas, corn tortillas for $13. The Content was amazing with a quiche like texture and satisfying flavor. The Bonita came with a plate of fillings and 4 corn tortillas on the side so you could make your own tacos. It was nice but I would prefer to eat tacos at lunch or dinner and have the Content for breakfast. I also tried some of the other To Go goodies over the next few days. The Holy a gluten free donut ($5) was wonderful with a rich chocolate sauce and blueberries topping a flavorful sponge textured donut that paired excellently with a cup of coffee with almond milk. The Beautiful a gluten free muffin which one days was blueberry lemon and the next day raspberry chocolate were large and delicious, I preferred the blueberry lemon one. These are large muffins and cost $5.50 but because it was vacation worth every penny. I also tried a cookie and piece of coconut pie neither of which were to impressive and the cookie was a little burnt. ![]() As we enjoyed breakfast so much we came back for early dinner the next three afternoons. Between 4-6 they have happy hour specials. During these three trips we tried the following $6 apps Sharing Nachos. Black beans, cashew nacho cheese, pico de gallo, avocado, spicy pepitas, escabeche. Fierce a Crispy tortilla bites. Jerk marinated portobello, roasted garnet yams, cashew queso fresco, pinto beans, roasted tomatillo dipping sauce. And Intuitive a Pomme frites. Purple potato and sweet potato fries, moked salt, gremolata, choice of chipotle ketchup or spicy cashew aioli. All of which were yummy my favorite was the Fierce with its cornie crisp outside and sweet mushy inside. For entrees we tried Magical ($16.00) CG Double Double. Housemade black bean patties, tomato, red onion, chipotle ketchup, cashew macadamia Cheddar, gluten-free amaranth and millet bun, roasted garnet yams. Smokin' ($16.00) Chili bowl. Smokey red bean and tempeh chili, cashew sour cream, crumbled jalapeño biscuit, spicy chopped pickle, scallions. Elated ($16.00) Mole Abuelita enchiladas. Black beans, grilled portobello mushroom, braised butternut squash, salsa verde, avocado, Mexican coleslaw, escabeche. Resolved ($16.00) Southern soul food. Red beans and dirty rice, blackened jerk tempeh, smashed maple yams, spiced collards, coleslaw, jalapeño Cheddar biscuit. And Bountiful ($16.00) Blackened tempeh Bolognese. Quinoa shells, cashew Mozzarella, Brazil nut Parmesan, spinach. My favorite was the Elated with the rich sauce covering the outside and the moist flavorful filling of the enchiladas it really hit the spot. My husbands favorite was the Bountiful the shells were cooked but not mushy and the cashew mozzarella really complemented the sauce; his only complaint was more tempa in the sauce would have been nice. I also really enjoyed the cheddar biscuit and cashew sour cream. All of the dishes were delicious and I would order all of them again! I wish there was a Cafe Gratitude or the like in both Chatham and Cambridge! Have you been to Cafe Gratitude before or know of any good vegan restaurants on Cape Cod? Molly Hubner Team Leader and Educational Consultant Usborne Books & More w4728.myubam.com New Legoland Addition By Molly With New England’s April Fools Day joke being snow this year the kids and I headed to Legoland to checkout the new interactive exhibit there. If you are interested in visiting Legoland in general checkout my other posts here and here. As usual we arrived just as Legoland opened and there was no line. After taking the factory tour (my kids wanted to do for Legoland bricks but there were none which was disappointing) and taking the Save the Princess Ride we headed to the new exhibit Lego City Builders. Lego City Builder is the start of a city with building and cars that are already built and glued down and then there are buildings that are started that you can add to and empty spaces to build your own buildings. Also in the exhibit are smaller tables with building prompts and extra bricks to add to the city. There are two Lego puppies and two robbers hiding in the city to find. My kids spent about an hour in the Lego City building their own buildings and only stopped because we needed to head home. The one thing I was disappointed with was the upkeep of Lego City it has only been open for about 6 weeks and most of the building are already missing pieces, glued mini figures pulled out and taken and the Lego plates are dirty. I will definitely be taking the kids back to play at Lego City Builders and hopefully the exhibit is in better repair! Have you been to the Lego City Builders exhibit, what did you think of it?
