1 lb ground turkey
1 large parsnip
4-5 purple top turnips
Salt & pepper
Extra Virgin Olive oil
Brown turkey in a pan with Worcestershire sauce. (About 1/4 cup)
Peel & cut turnips & boil until soft, mash until smooth (like mashed potatoes) add 2 tbsp olive oil, 1 tsp salt, mix & set aside
Peel & cut carrots & parsnips steam until soft
Place ground turkey into casserole dish, layer carrots & parsnips on top of turkey.
Then layer mashed turnips on top of carrots then smooth over top. Add pepper (if desired)
Place into preheated oven at 350 for 20 mins.

Oh, I love Shepherd's Pie! It's such great comfort food, and there are so many variations so you never have to get tired of it, plus you can use up things like leftover potatoes, onions, veggies, etc. Gotta love a cost-effective and delicious dinner idea!
